In order to digest protein (that is any protein, not just meat), you need a highly acidic stomach. Thanks to various problems, this your acid production can fall behind. One common factor is age, but reduced acid production can affect a broad range of people, and is heavily affected by diet. This problem, once started, compounds itself since the lack of gastric acid in turn causes a decrease in pancreatic enzymes, and slows down or halts the chain of information which tells your system to produce more bile, or acid. Basically, if you eat a meat pizza, and it is still hanging out and playing video games with you 6 hours later, you can assume that your ability to digest it has been compromised, and betaine HCL might help. That somewhat facetious anecdote aside, low acidity can has a myriad range of problems, including acid reflux, post nasal drip, inability to gain or lose weight, etc. Basically indigested protein can wreak havoc on your body.
The goal of betaine HCL then is to restart this process, and give your stomach what it needs to properly start digestion. The pepsin is an key enzyme that helps give an additional boost. The first time you take this product, I recommend starting with one pill before a meal, and working your way up to (possibly) three, but no more. This is a variable process, unless you eat the same thing every day. However, as you might have guessed from the above description, you should not have to take this product forever. Indeed, you should find that the dosage that worked best for you becomes too strong after a while. This is a good thing, and reflects the fact that your body is recovering its ability to produce acid. Of course, I am not a doctor, this is information I have gleaned from books and med reports online. Your mileage may vary.
That long winded discourse was simply to say that this product works as intended. I started out taking up to three, usually two, of these pills with each meal. They worked well, and I believe have a well standardized dosage. Now, I almost never take more than one with a meal. I'm not sure if it says on the package, but you want to take these a few minutes before a meal, particularly one with obvious sources of protein (this includes dairy).
