This is in part, due to the fact that the average American diet is severely lacking in omega 3 fatty acids, but is very high in omega 6. According to the literature I have read, the ideal ratio of omega 6 to omega 3 should be 1:1. However, the average American diet is estimated to provide a ratio of 33:1!
Another problem with consuming enough omega 3 is the fact that our oceans have been polluted, so nutritional experts caution eating too much fish. Some have gone as far as to not eat fish at all (though I think that is extreme).
