Any time you extract a protein by partly digesting it, in this case with enzymes, the resulting protein will taste bitter. This is natural. If you add typical digestive enzymes to raw brown rice, and soak in water over nite or longer, the resulting rice, will cook faster and will be easier to digest, but will taste bitter. Soy sauce, pre-digested soy protein, made from from beans or soy protein, must be aged for a good year to eliminate the bitter taste.
I think the only thing to be done with this product--which, if primitive, is very high quality and better for you than soy protein of any kind-- is to mix a teaspoon or two into water, gulp it down, and consider yourself protein-supplemented. Make it part of your pill popping regimen and dont consoider it a 'meal'. If you want a asweet and delicious "shake" ... grow up. That is, change your expectations about this product. It's a protein supplement, not a 'food', regarless of what thew label tells you.
Also note that insoluble proteins of any kind will feel mealy and taste chalky. They form suspensions (until they settle), and cannot dissolve--unless you add more enzymes.
To contrast, examples of soluble proteins which have a strong 'savory' flavor and a clean 'mouthfeel' are soy sauce, and Marmite, which is brewers yeast protein with added flavors. Both taste great and make other foods taste great but are too salty to be considered sources of protein.
